Mileage! Way under what the sticker says, it should be 16 on the low end, I'm getting 11.5 and driving like a grandpaw
I have less than 300 miles on it, what are my options?

At 300 miles it's not even broken in yet. I would bet your numbers increase after the first oil change. Also, it's pretty much a known fact at this point that the claimed MPG is usually BS and also unenforceable.

I have owned quite a few full size 2WD GM pickups and day to day I average about 16mpg. On a trip with mostly highway driving I average about 19MPG. I do not baby them.
The numbers you were quoted is what most people quote, their Interstate mileage. The City Mileage listed on most new trucks is a realistic average, the highway mileage listed is a dream.

Is that even one tank of gas? Are you sure it was filled all the way up when you got it? Calculator on the dash isn't always accurate. Only way to know for sure is to fill all the way to the top, run it down significantly (1/4 tank or less) and fill it up and divide miles by gallons filled.

Also your definition of driving like a grandpa might not be the most fuel efficient. Light on the gas to accelerate, off throttle coasting and as little braking as possible is key around town.

Middle of summer, bumper to bumper traffic, tons of heat, blasting the a/c will not help mpg. Usually break-in miles are not the best to judge MPG. But honestly a 4wd chevy pickup isn't going to return stellar numbers.

None of the two dozen new 2WD trucks I have owned ever got 18 average or 21 highway but I drive mine.

Just filled up, I came up with 12.9 mpg! That's better!
I also used 100% gas, so that should help also, we'll see
Now the trucks computers acting like it should, it's fluctuating up and down when I gas it or coast, before it seemed stuck, only moving one or two tenths no matter how I drove, and over long distances

The '14s have cylinder delete and variable cam timing. I'm not going to argue anyone's experience with their trucks, but my friends trucks have been getting
    great milage.
One of them recently put larger rims/tires and removed the front spoiler thing on the lower/front of the truck, it dropped 4-6mpg.
Obviously if you drive harder than a pawpaw milage will suffer.

If your truck's computer works like mine, the fuel average resets every time you re-set the trip meter. When you roll away from the gas station, it'll jump up and down wildly as you've only gone so many yards, a mile, two miles, etc., and it's more or less showing you your immediate mileage. Once you've gone a couple hundred miles averaging, say, 10mpg, you can drive extra easy or hard and it won't move the average up or down very much. Sort of like how in college if you coast along with a 2.0 for three years, and then get a 4.0 last semester, you're not going to significantly improve your GPA.

I had a F150 rental recently for about a week and I got mid 20's on the highway and mid-high teens in town. These new trucks are capable if you can avoid the temptation to go fast :)

I have a 2012 1500 2WD extended cab, 5.3L and I am getting about 12.5 to 13 mpg. Driving mostly in town. Interstate runs to the camp pulling my ATV and trailor, getting about 16 mpg. My truck also has the 4cyl dropout feature.

You would be surprised at how many DIFFERENT operating programs identical vehicles come with.
10 brand new identical trucks , side by side, DO NOT have the same operating strategy.
I can't answer why, I can just tell you the truth.
Now, is that your issue ? Not sure either ?
