Finally have time to make my yearly batch of Smoked andouille. This is a 50lb batch and should last until January or Febuary. Then it will be smoked cajun sausage for the freezer

Well, 54lbs all stuffed and in the cooler now. It will go in the smoker in the morning and be smoked over pecan wood.
