    Running 2 turkeys through the smoker today. These are huge, 23 #, but after 2 days defrosting in the brine they'll only take about 4 hours.

    On a related note I'm thinking about selling smoked turkeys and fried turkeys for Thanksgiving. I could have them smoked for either the night before or the day of. Depending on the price of the turkey, smoked about $30 picked up in Metairie, delivery locally could be discussed.

    Anyone interested?

    I've smoked a couple turkeys on my weber smokey mountain smoker, they come out really really good. Have to be careful with the wood you use, I found a stronger smoke flavor doesn't compliment the poultry like it does beef or pork. I let them soak in a brine for about 12 hours before smoking them.

    I see a lot of guys do this(test run)and I wonder if by the time Thanksgiving get here if they even eat any due to being tired of eating it by then. No offense now.

    Honestly I am planning on doing a stuffed pork loin A couple of the wife's coworkers have requested turkey, something I've done before, and that's why I'm asking around. I can smoke 4 turkeys at a time and once you've heated the fryer oil, 45 minutes per turkey means you can do a bunch before the oil has given up the ghost.

    I have this exact same smoker. Smoked a turkey last year and my crew said it was the best one ever. I invested in a set of electronic temperature probes that connect to phone via Bluetooth that takes the guesswork out of cooking time. Good luck they should be awesome.

    Did you seals the seams with the felt gasket? I found that trick online and sealed it all up when I assembled it. I have another friend who didn't. He seems to have a lot of issue maintaining temperature.

    That's a good idea but I did not make that change. But I don't have issues maintaining temps. In fact when I smoke something I only have to use 1 of the burners at a time to keep the temp around 225-240 which is where I find it smokes/slow cooks the best. And since the flood I use it quite often because I'm in the process of rebuilding and don't have a kitchen, oven, etc. yet.
