No need for a water pan, although you can put one. Main thing is to try to get the grill 24" inches above the bottom of the charcoal basket. Cooking it @ 225-250 over direct coals is generally considered Texas style. My grill is 8 inches below the lid. This will give me plenty room for beer can chickens, a whole turkey and pork butts.

Here is probably the best step-by-step build guide I have found and the easiest to go back to since the guide is the very first thing.
Going through all the pages you can see all the different modifications people have made to suit their fancy. There are numerous little things that can be added/subtracted/modified to suit you own taste once you get the basic design down.
