    Anyone else doing anything?
    I've got 40# of chicken leg quarters, 4 spare ribs racks, and 14# of gar that's not in this picture.

    The rabbit, stuffed jalapeno peppers, rice dressing, and steaks were darn good. The sausage left a little to be desired since it was not the usual brand that we tend to buy. Man oh man, your racks and chicken be looking very good!

    Had Jambalaya with Yuengling Black & Tan followed by pecan pie.

    Then I made smoke come from the end of my WWII Winchester M1 Carbine.

    I fired 21 rounds in the rain to honor my Dad and uncles (one KIA in the Battle of the Bulge) who fought in WWII and Vietnam. I try to do this every year at Memorial Day and/or Veterans day.

    @TheMole68 that's looks so good! How did you do the gar? Made balls and put them in the smoker? Just curious, always looking for different gar recipes.

    I brined them overnight using the same brine I use for turkey and chicken. Alton Brown's turkey brine.
    One fillet, they were 7.5# each, I threw on the smoker after rinsing it and cutting it into strips. Went about two hours. It was really good everyone remarked it was closer to pork or chicken in taste than fish. Almost like pork loin.
    2nd fillet I just did in the grill with lemon and butter and garlic, I don't have photos of that one. They were both very good.
    It was a bigger fish, 25#, 50".

    It was really tasty. Had a birthday party recently and smoked just chicken quarters. People who had had the gar for at the last get together asked if I had more.
