    Little Sunday smoking.
    At my dad's using his Traeger to make a brisket.
    Did a real simple rub with salt, garlic, chili powder and put it on about 715.
    Thinking it'll be about 10 hours @ 250 total.
    Planning to wrap it up when it hits about 160F internal temp.
    Photos from start and 2:30 in.
    Trying to keep the top closed.

    Wrap with what? I recently starting butcher paper ( or even a brown bag) and find it far better than foil.

    I like a nice bark. So I don't wrap it at all

    But wrapping it will help it retain the heat and keep moist and soft

    Yep. That's why I started with the butcher paper. It still retains the bark but helps to keep most and prevent over smoking.

    Butcher paper is the recommendation I've had. Watched Franklin BBQ. Figure if he's willing to recommend it...

    I know, trying to keep the lid down. Only checking every 2 hours to be sure. That's at 4:30 in.

    I've had good results with AmazingRibs.com as a guide. They have started discussing the use of butcher paper as an option vs foil. Does it hold liquid ok? I add some broth when I transfer it to the oven. (At about 150 degrees) he calls that the "stall". Maybe no moisture added would save the bark?

    Never needed to add more moisture other than giving it a mop from time to time. If insist on using foil and want a better bark you can remove it from the foil around 190 and let it finish up that way.

    No added moisture. Just wrapped it after 6 hours and let it finish to 200.
    Ended up using foil since I only had waxed paper, not plain paper. It's really good.
