    Several Victorinox chefs knives, a few old hickory’s as well. I love the old wooden handles and steel. Not really any complete sets.

    " Old Hickory" how well I remember. We were gifted a "bag" of used back in the day '66. yes, the wooden handle and carbon steel blade were "as good as it gets".

    ....then came the cooking shows and their "fancy" knives; thus spurring the high end knife business!!

    Psshh... your taste are too upity to be hanging out with this crowd.

    I do have an Old Hickory slicer and a Echo butcher knife if that make me fit in better. One thing I can’t stand is a dull kitchen knife hence the Shuns. They’ll cut just looking at them wrong and you won’t know it.

    I’m just jealous... the Shuns are fantastic blades. One day when I stop buying guns and ammo I’ll pick up a couple.

    The Victorinox have been some of the best stamped blades I’ve ever had. They work really well for my uses.

    I have both a Victorinox and a Dexter boning knife for deboning deer and both nice and sharp and will hold a edge. Both are easy to sharpen when they do get dull.

    I went from a Hampton Forge set to a 10" Miyabi 800D Chef's knife and a rocking Santoku.
