After ribbing someone about pics I thought should at least contribute a little to the cooking section.
I cooked a pork and sausage Sauce Piquante last night. Gator and Deer work really good as well but I didn't have any on hand.
If you've never had any, most folks cook it as a spicy roux based sauce with tomatoes in it somewhere. I use rotel.
I cooked this one in a #10 dutch oven. Its about 12" round x 5" deep.
I browned down the sausage then the pork and removed them.
Cooking down the onions, bellpepper, and adding in the rotel.
Adding it all back together
Adding in the water and letting that come to a boil then adding in the roux.
Added some shrooms and green onions to the pot. Thats a pot full.
Its getting close and smelling really good.
The pic doesn't do it justice and the rice is usually drowning in it but I needed a pic to show there was actually rice in the bowl.
It was good then but will be better the next day like a good gumbo is.
