    So the husband was on shift at the fire station and I didn't feel like dragging out pots, pans, food and doing a big production for just little 'ole me.

    I rummaged through the pantry and found, way in the back, a can of Spam.


    The date of expiration was a bit past due, but Hey, it's Spam, processed for maximum shelf life, right?


    Popped the top and no malodorous fumes emerged, and still looked like, well, Spam!


    So I plopped it out and sliced to crackerable chunks.


    But still, there is the lurking thought of "What if it DOES taste off? I need a guinea pig". No worries, my ever present shadow when coming anywhere near the kitchen, is waiting for the other shoe, or food bit, to drop.


    Here Sweet Pea, want some....treats?



    No, that's all of it.


    Don't give me those puppy dog eyes!


    Seems to be ok with her...good enough for me!

    Fried Spam and eggs is what we do here. On job sites it was potted meat or V Sausages with crackers

    I don't mind when the liquid is around the spam.....it is when it solidifies to some nasty gelatinous goo that just uggghhhhh, can't do it!!

    Wife loves spam, but I do not, way too salty for me. We eat it about once every other year with rice and eggs

    Can of Spam chopped in smallish chunks.
    Brown in black iron, touch of olive oil.
    2 chopped green onions and sprinkle Zatarains Garlic and Herb in the last minute.
    While doing Spam, make 1 box Kraft Mac & Cheese, however you like it.
    Both done, mix together, add pepper to taste.
    Great meal with a cold Stella.
    Enjoy.

    Eww. I don't do the whole ground up "meats" thing. Bacon is about as far as I'll go for processed meat.
