    I know this seems a bit late for this but......

    Surely if you had a turkey for Thanksgiving you had leftovers. We did! On Saturday I used my daughter's Instant Pot to make a stock from the turkey carcass. First time using the IP for me and I was surprised how well the stock came out.

    My plan was to make a Turkey Andouille Gumbo yesterday(Monday)but Sunday evening I started to get things together for the gumbo and decided there wasn't enough turkey left to make the gumbo.

    Here's one of the several After Thanksgiving Day sandwiches I enjoyed over the weekend using some of that homemade bread I made last week. It's not exactly a perfectly neat sandwich but it sure is delicious!!!!!

    Looks Great we food saver bagged most. And made a casserole. Frooze the Bags and Containers of stock. The leftovers are the best part. Have 3 more birds in the freezer for 2019 Will do Febuary or 1sr week of March or so. May And Christmass in July. And some time September

    Those egg rolls and sandwich look great, I did what you were going to do and made a gumbo, turkey and Manda sausage with a dark homemade roux.

    Leftovers? Dude, we ate the whole bird. Used a buddy’s injector and crab boil recipe, complete with red potatoes and ear corn in the pot, done in the oven.
    The wife did repurpose the ham in some ham and corn soup that came out pretty good. But that turkey tho.... gone man.
