    Yesterday afternoon I smothered some pork chops for dinner last night.

    Simply seasoned the chops with sea salt and black pepper and seared them on both sides.

    Next I diced and cooked down some onions, added flour and cooked that a bit then added chicken stock and got those chops smothering.

    While that was simmering I made a batch of quick rolls which I didn't care for but the rest of the family thought they were good.

    Then it was time to eat! Made some candied yams and added a side of peas and carrots and it was one delicious meal!!!!!

    My mama use to fix me those and I finally got her recipe. My kids love them as much as I do. Thick gravy when done, poured over yellow rice.
    I use butter, flour and milk and just a tad of cornstarch. Minced onion and bell pepper. A little salt and pepper. Wrought iron skillet is a must. And a pan of cornbread.

    You sir are making me hungry...
