    Skin and season (Cut rack in 2)(Max of 2 racks will fit)
    I set them on the rack
    23 minutes (Meat setting)
    In the oven with sauce for 15 minutes@ 325

    I put a cup of apple juice and a pack of onion cup a soup in the bottom.

    Baked potatoes in the instant pot takes 25 minutes, mashed potatoes in less then 10 min. My wife buys a bunch of trivets to raise the food being cooked above the water. Also pho can be made in less than an hour

    There is a Facebook group - *Wild Game in the Instant Pot.* Lots of good stuff there.

    I am working on a squirrel sauce piquant this weekend. Season squirrels, put in the Instant Pot for 30 minutes, then debone and finish the recipe in the pot. I’ll come back with details if it works.

    Did that tonight. Different recipe, but the Instapot worked great!

    Also try corn on the cob! I swear when I make it from fresh corn, it’s many times sweeter than boiling them

    Got an Instapot for Christmas. Anyone have recipes or favorites to cook in it?

    Here is my squirrel sauce piquant I tried out today:

    Squirrel Sauce Piquante (Instant Pot)
    (adapted from http://emerils.com/127828/chicken-sauce-piquante)


    • 1 pound cooked, de-boned squirrel (6-8 whole squirrels)
    • 1 tbsp Cajun/creole seasoning (Tony Chachere’s, Zatarain’s, etc.)
    • 1/2 cup chicken broth
    • 1/2 pound smoked sausage, sliced
    • 2 Tbsp Kary’s Dry Roux (or half-cup prepared roux)
    • 1 medium onion, chopped
    • 1 medium green bell pepper, chopped
    • 2 ribs celery, chopped
    • 1/2 jalapeño chile, minced
    • 1 1/2 teaspoons chopped garlic
    • 1/2 teaspoon crushed red pepper
    • 1/2 teaspoon dried thyme
    • 1/4 teaspoon cayenne
    • 1 tsp salt
    • 2 bay leaves
    • One 28-ounce can crushed tomatoes
    • 1 6-ounce can tomato paste
    • 1 tablespoon Worcestershire sauce
    • 1-2 cups chicken broth
    • Steamed white rice, for serving


    • To prepare squirrels - season with Cajun seasoning, layer in Instant Pot, on the rack. Pour 1/2 cup chicken broth in the bottom and cook on meat setting for 30 minutes, natural release. Remove squirrels, pull meat from the bones, and set aside. Reserve the broth from the bottom of the pot.
    • Sauté sausage until browned, remove and set aside (with squirrel).
    • Add 1/2 cup reserved broth to the pot to deglaze, then add dry roux and stir until thickened.
    • Add vegetables (onion, bell pepper, celery, and jalapeno) and sauté until softened.
    • Add seasonings (garlic, red pepper, thyme, cayenne, salt, and bay leaves) and stir one minute.
    • Add tomato paste, crushed tomatoes, Worcestershire sauce and simmer five minutes.
    • Return squirrel and sausage to the pot, add the remaining reserved broth and additional 1-2 cups of chicken broth (enough to make 4 cups total). Cook on low stew setting for one hour, natural release.

    Serve over white rice with parsley or green onion garnish.

    Do you have a recipe for the instapot pho? That sounds amazing
