    I took it and made some small cuts and stuffed garlic toes in the holes. Then made a marinade and added lots of Garlic and Diced Onions. And made a wet rub. Wrapped it with Plastic Wrap it sat in the fridge for a day.
    Now in the oven at 350

    That’s one of my favorite things to cook.

    I start with a salt and sugar brine maybe some garlic or other spices but definitely salt and sugar. I let it sit for preferably 36 hours (a minimum of 12). Then I dry it off and rub on the dry stuff. Then into the smoker for 22-26 hours with some apple or peach wood. I shoot for thorough *barking* to help keep the inside juicy.

    Smelled good!!!

    The fun of cooking is putting the exhaust fan on low and making the whole area smell it.
    Popped in some Yellow Poptotes to make it simple.
    Bone showing so almost done
    BTW} N4sir Hope the Pickles are ok.

    22-26 hrs., what size butts are you cooking and at what temp?

    I marked them hot but were mild. You can only taste the crab boil as an after taste. 2 weeks later I made sweet ones so marked them hot and sweet. I am going to do some hit for real green beans or something. When the 24Oz wide mouth get here. No on had them in stock. I used to make hot green beans for Bloody Mary's and add Cajun seasoning.
