    Since it's chilly here today(the wind chill about 4:30 this morning was ball freezing when I went out to get the paper! Lol......)I decided to cook a big pot of chili.

    Browning the ground beef with onions, bell peppers and a lil garlic.

    Not bad at all! Might be a little spicy by the time we eat it, I added a lil powdered jalapeno pepper before getting a good taste of it. Lol........

    I made a big pot of Tex Mex chili in my instant pot.
    I cook the dry pinto and kidney beans with rotel onion, and garlic .
    Brown up ground beef with taco seasoning, onions and bell pepper.
    Add the beef too the beans.
    Add 12oz tomato paste, 24oz tomato sauce, I can diced tomatoes.
    1tsp liquid smoke, 2tblsp cumin, and 2 packets of chili season.
    Put in instant pot high pressure for 5 mins, npr. It really helps force the flavours into the sauce.

    N4Sir would you mind posting a detailed recipe?
    I can cook a good chili but I find it’s only good, I can never cook a great one. I understand if you want to keep your cards close to the vest.

    Here you go 3fifty7............

    N4sir'sCajunate'Homemade Chili



    6-7 lbs. ground beef (80/20 works best)

    5 ½-6 Cups diced onions (you can cut back on the onions but this is what makes my chili really good)

    2 Cups diced bell peppers

    3 ½ - 4 Tbsp. chili powder

    1 Tbsp. black pepper

    1 Tbsp. salt

    2 Jalapeno peppers, sliced

    3 16oz cans red kidney beans

    3 16oz can Blue Runner cream style red beans

    4 toes garlic(finely chopped)

    2 large cans Crushed Tomatoes

    1 large can whole tomatoes(crushed by hand)

    1 8 oz can tomato sauce


    Start off by browning the ground meat in a Dutch oven or large heavy pot. Be careful using cast iron as the acid in the tomatoes can cause an iron taste to leach into the chili. Only use a really well seasoned cast iron pot if you have to. When half browned remove liquid and add the onion, peppers and garlic to the pot and continue brown and cooking the seasonings.
    Add the meat back into the pot and mix well with the onions and bell peppers. Add the tomatoes, sauce and paste and stir to mix through.

    Add the chili powder, black pepper, salt and jalapeno pepper slices. Let simmer for about an hour over med/ low to low heat but stir occasionally to make sure it's not sticking to the bottom of the pot.

    Add the beans and let simmer to heat beans completely through(depending on the brand and quality of the canned beans you may need to let the chili cook a little longer so they aren't hard). Taste and add whatever seasoning you think it may need.

    Liquid smoke and cumin sounds like a good add. I might try that very soon. I got an instapot for Christmas and plan on using it soon. I will likely let it cook on Medium with the pressure up all day so it really forces the flavor in :)
