    Oh My ...That Looks So Good !

    I got some fresh home grown Okra and Tomatoes coming in , Sausage in the freezer , I think I need to pick up some shrimp ...might cure that Summer Gumbo craving you done flung on me ....Good Gumbo Rocks !

    Ok weekend project for you. Debone a portion of the chicken then fine chop it along with some sausage. In a large bowl add a cup of cooked rice and just over a cup of juice along with the chopped meat. Let it sit at least 24 hours in a cold refrigerator. It should be *a homogeneous semi-solid* at this point. Scoop with an ice cream scoop (approximately golf ball size but no larger) and batter flour-milk/egg-Louisisna Chicken Fry then a quick deep fry until GBD.

    Voila Deep Fried Gumbo

    I have made Gumbo Balls in the past. Several years ago I made 'em and brought them to an Endymion parade party. Everyone loved them!

    They came out fantastic!!!!! At the party which had lots of food people were at first apprehensive about trying my balls. There was a chef there that looked at me like I was crazy when I introduced him to them but after the first bite they fell in love with them. Every year I get invited and requested to make the Gumbo Balls.
