    We had breakfast for dinner here tonight.

    I used the Blackstone griddle to cook sausage patties and made hash browns on it as well.

    Breakfast like you had as a evening meal is super and yours looks very tasty. When one is retired, eating it in the morning is unnecessary and icky,

    Box grater is your friend. These were really good! I put 'em in water to keep from turning brown. Add diced onions, a little salt and good amount of black pepper. Mix it up real good and griddle in hot pan or like I did these, on a outdoor Blackstone griddle with butter.

    Do you pre-cook the potatoes before throwing on the griddle, or just grate them and add to butter?

    I've done it both ways. You can microwave the potatoes til a firm (almost)doneness. Let them cool down then grate them or grate them and then cook them either right away or what I sometimes do is grate them earlier and let 'em soak in water and then drain before cooking/griddling. They do cook faster doing them on something like a Blackstone outdoor griddle where you can openly steam away the moisture.
