    We had fried catfish.

Catfish Meuniere Amandine with creamy cheesy grits, Zydeco green beans, crab and shrimp au gratin stuffed mushrooms, and fried shrimp.

Wow! Another mouth watering display of culinary talent!

Do you soak your catfish in cold water the night before?
My Wife does that to get the fishy taste out.

About how many hours in the kitchen does it take to prepare a meal like that? That looks incredible!!! I know the fish and shrimp will fry pretty quick, but I got to think there is some prep time involved in a meal of that magnitude.

Probably about two hours from beginning to sitting down to eat and that's taking my time having a few beers in between. This meal looks more complicated than it really is. I fried the fish outside so that requires standing there watching over it.

No, just rinsed it and let it drain before salt and pepper and passing through egg/milk wash and then whatever breading. This was seasoned flour.
