    Homemade calzones here tonight. Made four, two meatball and two pepperoni. The biggest difference in them was two were plain pizza crust, one was basil and garlic and one made with fresh minced jalapeno pepper in the doughs.

    First two going into the oven. One of the plain dough with meatball and ricotta, mozzarella, provolone and shredded Parmesan cheeses. The other a basil and garlic crust with pepperoni, mozzarella, ricotta, provolone and Parmesan cheeses.

    Looking good! What recipe do you follow for the dough? I was experimenting with a few different pizza dough recipes and haven't found one that I like. Love papa johns dough but can't recreate it!

    This one is easy and quick.

    3 MINUTE PIZZA DOUGH



    INGREDIENTS

    2 to 2 1/2 cups unsifted, all-purpose flour

    One 1/4 oz packet instant yeast

    1 teaspoon sugar

    1 teaspoon Kosher salt

    1 tablespoon extra virgin olive oil

    3/4 cup very warm water, 120 to 130 degrees F

    DIRECTIONS

    Using a food processor with the 'S' blade in place, put 2 cups of the flour, yeast, sugar, and salt in the bowl of a food processor

    Add 3/4 cup very warm water - about 120 degrees and the oil - process until a soft dough forms

    If it's still sticky, add extra flour a few tablespoons at a time and process

    Grease a large bowl, shape the dough into a ball and put in the bowl turning so all sides are oiled

    Cover with saran wrap and let rise in a warm place until doubled in size, about an hour

    Then simply use as normal

    Thanks I'll have to give it a try when I'm off Keto again. This is the one I found that I liked but still didn't taste quite like a professional pizza shop - https://sugarspunrun.com/the-best-pizza-dough-recipe/. The recipe you posted looks pretty close so I wonder what professional shops add that I'm missing.

    Ingredients

    • 2-2 1/3 cups all-purpose flour OR bread flour¹ divided (250-295g)
    • 1 packet instant yeast² (2 1/4 teaspoon)
    • 1 1/2 teaspoons sugar
    • 3/4 teaspoon salt
    • 1/8-1/4 teaspoon garlic powder and/or dried basil leaves optional
    • 2 Tablespoons olive oil + additional
    • 3/4 cup warm water³ (175ml)
