    Butter Strap

    Also like to take and cut it thin across the grain take a meat tenderizing hammer and some Tony Chacheres and Garlic powder coat the meat and then tenderize it. Get it ready. Take a large black iron pot and melt a stick of butter add all the backstrap at once on medium heat and place the lid on the pot. Stir it occassionally cook for about 15 minutes and then place a large onion cut into rings accross the top and keep the lid off while you cook the onion into the meat once the onion is clear most of the liquid should be gone.

    Warning: Get a loaf of fresh bread and keep on hand for them to clean the sauce from the pot...
