Tonight we had spaghetti and meat sauce red gravy from the freezer leftovers from a week or two ago.
To add a little something different I made Brenda Gantt's Fried Eggplant from a video online. This came out fantastic although I did alter the recipe slightly. I used Zatarain's Wonderful seafood breading instead of corn meal and I seasoned the eggplant with garlic powder, salt and pepper. Oh, and I added a lil' baking powder to the breading batter mix.
The eggplant came out light and crisp! I sprinkled Parmesan cheese on it after it was cooked.
