    Thought a gumbo would go well with the cold weather. Got some andouille from Jacob's in LaPlace and smoked some chickens.

    Obviously also made a potato salad, both tasted great!

    Man those chickens look amazing! I just got done scooping out my leftover gumbo too. When that col weather comes around, every Coonass is boiling a roux!!

    Must be contagious... had a gumbo going by 7am this morning. Chicken and deer sausage with rice and cornbread. Makes me wonder how all those people in the cold north survive on plain old boiled stuff.

    I believe I am the only person I know down here that truly dislikes gumbo.
    (I know, sacrilege!)
    My wife loves it however (part Cajun and therefore she has to) and I make it for her.

    After seeing this thread, I want to buy a smoker.
    Those chickens looked fantastic.

    Any recommendations for a good smoker that a novice could use?

    Now Lizard Crrek is not that far from Ponchatula should you have too much gumbo to handle lol

    You're right, it's not far at all. I made at least 4 gallons and have plenty left. PM me your address or where to meet and I'll bring you some.
