Rather than pay someone to fit your stock, I'd recommend sending it to Briley, in Houston, to install an adjustable comb and butt pad assembly. If you ever gain/loose weight, you can simply adjust the stock yourself. If you are shooting competition ( trap, skeet, sporting clays, etc.), this is the preferred route to take.
i have been measured once for a SxS and then years later for a OU, but not in Louisiana. (Houston and Barnsley Gardens in GA)
One way to find someone is to ask Dealers of high end shotguns. That is who sent me to the guy in Houston.
I highly recommend getting measured and a custom fit gun! I shoot much better with these two guns. Both guys used an adjustable try gun and you shoot a steel plate a few times.
I needed more drop and did talk to Briley. I needed a good bit cut off to get the drop and that gets complicated with the stock attachment and they said they couldn't bend it that much.
I took it to Tommy Butler in Woodworth. He did an excellent job with my shotgun stock. He has done work for me before and I have always been pleased with his work. His prices are also very good. Tommy specializes in rifles and used to build custom rifles. Great guy. I highly recommend him.
