    Felt like eating some fried fish for dinner and I have sweet potatoes so it was a no brainer.

    Thin sliced a few sweet potatoes on the mandoline and marinated the catfish in beer for a few hours then after draining and a yellow mustard bath and battering it was time to fry.

    Hot chips right out of the oil.

    The wife made a lil potato salad and I whipped up some drop biscuits. Mmmmmm.........

    That fish is looking good, can you provide more details on your preparation. I've always just rinsed and dipped into some fish fry breading.

    Sure.
    During the afternoon I rinsed the fish off and poured a can of beer into a bag the fish was put in. When closer to frying time I drained the fish good and put a lil over a half cup of yellow mustard on it and coated all of the fish. After letting that rest while I was outside frying the sweet potato chips the wife battered the fish which is simply shaking off excess mustard/liquid and roll in the fish fry(I think she used Zatarain's) Dropped the fish into 350* oil and flipped with a spatula. When floating and golden brown it's done!
