I'm down here for the fireman's convention and was wondering if there are any shops that would be worth my time

Closest that I know of would be Lafayette Shooters if you're just looking to poke around. They have a pretty extensive inventory to look at.

Cajun Guns & Tackle on Admiral Doyle is much smaller than Acadiana Outfitters, but if you're just killing time, it might be worth a visit.

Trackside and Buck Fin and Feathers both nearby in Broussard - decent stocks.

I stopped by trackside on my way home a couple weeks ago. I was pleasantly surprised! Ended up leaving with am armful of 17hmr, 9mm, & 357.
