    It's alright, I expect to be hated later when it's served.

    Crawfish Etouffee

    Okay, got the onions, celery and garlic oh, and a few bay leaves too cooking down till clear.

    All the other ingredients except for th crawfish in the pot(enameled cast iron for this)to simmer a bit before adding the bugs.

    Now actually it can be eaten right now but I like to let it set for about an hour or so to allow all of the flavors to marry and get a little tastier. Got some jasmine rice cooking and I'll throw some biscuits in the oven shortly.

    When do you prefer Jasmine rice over white rice? Certain dishes, or always?

    Actually I love jasmine rice and could use it all the time. I buy it but the 25 lb bag.
    Not a big fan of the par boiled stuff but when I cook jambalaya in the 30 gal. cast iron pot I'm less worried about it not cooking properly compared to long grain or even the jasmine rice.
