I literally do not want to eat red beans without it. The sausage is nice but doesn't really matter to me.

It's a great addition anywhere you might normally use ham or bacon.Yall definitely piqued my interest with the pickled pork, typically everyone around here including myself use smoked ham hocks, tasso, smoked sausage for a pork flavor aid when cooking.
Yesterday I did manage to find some pickled pork and proceeded to make the best pot of smothered cabbage in my life!
