Running 2 turkeys through the smoker today. These are huge, 23 #, but after 2 days defrosting in the brine they'll only take about 4 hours.
On a related note I'm thinking about selling smoked turkeys and fried turkeys for Thanksgiving. I could have them smoked for either the night before or the day of. Depending on the price of the turkey, smoked about $30 picked up in Metairie, delivery locally could be discussed.
