    After getting home with the wife from the eye Dr I began the prep work for this evening's dinner.
    Got some chicken thighs marinating for Chicken Shawarma tomorrow evening, a slaw and a sauce made for tonight's shrimp tacos and got a brine simmering for a corned beef to make Pastrami with.

    Alright, so I put the 5.5 lb corned beef brisket in the Pastrami brine where it will sit for 3-4 days and then it will be smoked.

    I used a turkey roasting bag to keep it completely submerged in the brine and this keeps it from making a mess spilling.
