    I am NOT perfect! Close, but not exactly there.
    That said, in TRYING to keep with being a good Catholic(I'm sure a lot of people would/could argue this).
    But, in trying to stay within the boundary's of a Lenten Friday I decided to make an Eggplant Parmesan and Garlic Parmesan Angel hair pasta for dinner this evening instead of a seafood dish.

    Of course there was warmed and buttered St. Joseph bread and freshly grated Parmesan cheese.

    I really am my worst critic when it comes to my cooking but I have to say this was was an amazing meal!!!!!
    I had to ask my wife "Why don't we have this more often?"
    I couldn't tell you her answer as she had a mouthful of the eggplant Parmesan. Lol........

    Awesome and looks delicious!! Thankfully for Lent I gave up Fasting and going to Church, so I'm good with a big plate of this.
