    Used to gut them in the hanging shed and skin the next day...or gut and skin let it hang a night then quarter...temps 40s or below. bleed out on ice for a few days...take it to B&O on OST in sulphur for some jalapeño sausage. Damn...

    As long as the knife is sharp, and you can safely use the knife, any will work fine. I dressed and quartered one with a sodbuster... no problems.

    If hunting public be sure to check regs, some don't allow field dressing and need to be checked in whole and weighed.

    This usually only applies on either sex weekends where mandatory check in and check out at a check station in in effect. Other times, the deer can be field dressed.
    I have used a havalon scalpel knife for the last 3 or 4 years and like it a lot. 2 fingers and barely touch and things separate.
