Gumbo Leftovers?

Can you really call gumbo eaten after the meal it was intended for...leftovers? I mean most gumbos actually get better a day or two later so Leftovers..... I think not. That said I had a nice hot bowl of Turkey Andouille gumbo for dinner LEFTOVER from yesterday. I think it is actaully even better today!

I never serve my Gumbo the day it's cooked.

Yesterday I started a Gumbo @ 0700. Finished it and turned the heat off @ around 1400. Put it in the fridge around 1700.

Served it this evening and it was MONEY!

I had potato salad in a separate plate along with some ham I baked on New Years day as well. It was DEEE...licious!!!

Here in Terrebonne Parish, we put a scoop of potato salad in our gumbo. Don't knock it until you've had it. We also boil eggs in our gumbos, too.

Add another for PS in the gumbo. Speaking of gumbo...a couple weeks ago I was scanning the radio stations in my car and got to the rajun Cajun(100.3) and they were playing a rap song about momma cookin gumbo
