    Just cook it on medium high for about ten minutes with a little oil stirring constantly, you can add vinegar to help with the de-sliming process. If you have a pound of okra I'd say to add a couple of tablespoons of vinegar.

    I use tomato to cut the slime and a little okra. sometimes I dice onion small and add sometimes I don't. season to taste and just cook it down slow until its as broken down as you want it. I let it cool then bad it into quart bags and freeze it.

    I have looked at this for a while and am trying to figure out what you mean by "cook down".

    If you mean de-slime the okra, it can can be done by par-boiling and wrinsing. Or, repeated "blanchings".

    Please tell us what you mean by "cook down" !
