It is 0300 and I am setting up my grinder and sausage stuffer to make 25lbs each of smoked sausage and andouille. I am going to make it today and smoke it tomorrow over pecan wood.
any recipes for making deer sausage?

I went ahead and smoked the andouille today. All I can say is a big hunk of fresh smoked andouille on a poboy bread and some spicy brown mustard, and a cold beer, makes one hell of a meal.
