Last night was meatloaf night and it was a good one! As I've done the last few times I did meatloaf this one too was cooked on the Keg. I've got it down pretty good where we don't end up with a greasy or dry overcooked meatloaf the way I do it. Cooking it on the Keg I use a disposable aluminum pan lid to cook the loaf on with holes on the side of the meatloaf to drain unnecessary fat and juices on to a sheet of heavy duty aluminum foil I use as a diffuser that way there's no grease fire flareups or dousing of the lump charcoal.

Meatloaf formed and chilled to hold it together.
