    Alright so yesterday I decided that I'd cook a big pot of red beans today for Monday evening's dinner. Got 'em on right now and they are smelling great.

    Ok... To soak or not to soak? That is the question. How long is enough if you do? Looks good!

    Yes. Soaking helps break down and remove the gas causing sugar, but you have to dispose of the water, not use it in the beans (supposedly, does seem to work for me best I can tell). I usually soak overnight, strain and soak another hour in clean water.

    Like my Mama, Wash, Pick, Rinse. Add whatever you are going to put in the beans and start cooking with no lid. Have to keep an eye on the water level. Never had gas problems.
    Those beans do look very good.

    Yes, I usually do soak them overnight if I remember to do so. I forgot so this morning I put them to soak about 7.00 while waiting for the coffee to make.

    YUM! What all do you have in there?

    Three lbs of beans, three pounds of Savoie smoked sausage, just under a lb of Bailey's tasso, 6 onions, about 7 toes of garlic, two, shallots(not green onions), 6 or 7 r9bs of celery, about a whole bell pepper, 6 bay leaves, Cajun seasoning and a lil Worchestershire sauce.

    Smells great and tastes even better!!!

    I didnt soak my beans, but we did boil them for 10 minutes and discard the water before putting them in the slow cooker.

    I only did 1 lb of beans
    5 Pimento/Cherry Peppers
    4 Jalapeno Peppers, removed seeds
    1/2 Bell pepper left over from something else
    6 cloves of garlic
    2 onions
    6 things of celery
    1 1/2 tsp of tonys
    some thyme
    Sausage

    Been on for 3 1/2 hours, its got some kick but not to bad. Ill probably let it go for another hour or so.

    The red beans I cooked yesterday were tonights dinner. I have to say these were some of the best! I had been thinking about them earlier today and the anticipation made them even better.

    Served with Jalapeno pickled quail eggs and buttered and griddled BBQ bread.

    Without red beans on Mondays in Louisiana the weekly calendar would be totally screwed up.

    Without Red Beans on Monday there would be no Tootsday. :dogkeke:

    :dogkeke: My dad always told us kids to be SURE and only eat 239 red beans. If you ate one more, you'd be two-forty. :D
