    Rice & Gravy​


    Well, my weekend was almost a total wash. I spent most of Saturday in bed with an excruciating sinus headache. Except for about five hours I spent at my daughter's high school graduation. Got home and went straight back to bed. I couldn't even go out to dinner to celebrate.
    Sunday was a little better but still a good part of the day in bed.

    I did manage to squeak out cooking(usuallyI wouldn't cook while sick but I knew this was pretty much an allergy attack)some chuck steaks with rice and gravy.

    Started off with seasoning the meat with granulated onion, a little salt and black pepper. Browned this up nicely and removed them to brown the onions.

    After getting the onions browned and deglazing the pan with them.

    Added water to disolve all that tasty goodnes and create the braising liquid.

    Then I put the meat into the liquid and onions and let that simmer until it was nice and tender. Fork tender actually!

    Served with spinach(and chopped boiled egg)and cream style corn.

    First, congrats to your daughter on graduating!
    Always an important milestone for the future.

    Second, I am pissed that you were not feeling well, thus unable to feed your family at the level I am certain they are accustomed to.
    ;)
    (Hope you feel better and kudos to you for your rule against cooking while ill.)

    Finally, I am so happy you have hard boiled eggs in your spinach.
    Grew up with that and never see it any more.

    Thank you for all of your great food posts.
    Have emulated many of them.

    Have to ask.
    When you bring your family out for a meal, do they walk away feeling that the restaurant didn't meet your previously established benchmarks for food quality?
    Just asking.

    I know folks first it was great seeing all that he was going to cook and all the preparations along the way...But NO, Know it's mouth watering meals like I used to have prepared for me every evening back in Avoyelles parish!

    There's a Cajun in the wood pile somewhere in this guys background...LOL

    Looks great as usual Sir, now back to my Bennie Weenie supper:}
