    One of the best gumbos I ever ate was the oyster and andouille at Roussell's in LaPlace.

    They had it just right.

    Add just a bit to give it a wonderful smoky flavor. Not too much.

    A day late...

    We made 2 big pots of Gumbo in the last week. Both times I used chicken, sausage and shrimp. It comes out awesome and Everybody loved it both times. I think if you have a recipe that's good to start with, the favors will marry and add to it all.

    Stick with just seafood.

    My mom gets a fried turkey from a family friend every Christmas and she ends up using it to make a massive batch of turkey/sausage gumbo. Quite possibly one of the best things ever.

    I'd recommend that combination as well.


    Ahh my specialty, but only if the andouille comes from Bourgeois' in Thibodaux. It's worth the drive! Glad it came out well, too.
