Simple, Delicious Red Beans and Rice!

Being Monday in Louisiana it seems to make sense to stick with something that works. Red Beans and Rice! Yep! I cooked up a pound of red beans for dinner this evening and they were fantastic!!!!! Grilled some hot sausage and made a simple crisp and cool old fashion lettuce and creole tomato salad with oil and vinegar as a dressing. Sometimes simple is just the right thing.

Why do I even look!!!!

Recipe? I know it's probably simple, but I have never made red beans and rice. And I don't want to have to trial and error some random internet recipe.

The great thing about cooking is as long as it still taste good its not a mistake. I have a tendancy to be overly critical of my cooking but when I cook for people and see them scarfing it down like its their last meal and I'm thinking I could have done this or I shouldn't have done that, I realize it doesnt matter.
