    Did a little smoking today. Smoked a ham and finished it with a bourbon glaze.

    Did a little smoking today. Smoked a ham and finished it with a bourbon glaze.

    Looks Great! Can almost smell it here in Metairie. Sharing a ham smoking tip that drives my neighbors to drool. In the last 30 minutes of smoke time, I put a pound of brown sugar in a double layer of hd foil formed into 4" deep "pan" about 8" diameter w/ flared sides and set it on top of the still hot coals - well below the grille. The sugar melts, bubbles up and burns into a lava that emits an unbelievable aroma and adds a great flavor. Sometimes I add a glaze made with a mix of Rouses Raspberry Vineagrette Salad Dressing and Whole Food Co.'s 365 Raspberry Preserves. (That's about the only thing I buy at WFC - it's tart - Rouse's R Jam is too sweet and made w/ high-fructose corn syrup.)
