    Yesterday morning I butterflied two nice chickens and I smeared a compound butter under the skin. I made the compound mixing some of my homemade citrus blend rub with softened butter. Then I sprinkled liberally the same rub on both sides of the chickens and into the fridge they went to air dry until it was time to put them on the grill.

    When it was time to cook the birds I had had the grill heated to about 450 degrees and lowered the temp to 350* when put them on.

    After putting them on the grill I decided to make a little glaze for the chickens using fresh lemon juice, honey, Kosher salt, black pepper and diced candied jalapeno peppers. Chicken done this way is really good but the glaze put it over the top!

    Served with a nice salad and pasta primavera made a great Sunday afternoon meal.
