My mom had a busted pipe under her slab. Fortunately, the area we knew the leak was just lead to one user so we knew which pipe it was, where it went under and where it came up. I bought some pex and the right fittings, cut the copper on both ends, forced the pex through and plumbed it up on both ends. Cost $50 and took 2 hours. If you know exactly which pipe is leaking and where to terminate it, I'd recommend the same.

One thing to look out for is soil erosion below the slab. It can cause cracks in the concrete. I had a hot water leak in the slab itself that I fixed myself. It was a pain, but I saved a ton of money. I was lucky the plastic between the slab an the soil prevented any erosion problems.
